I have been researching dessert recipes that involve black beans...sounds groos, right? Well how could one know unless they try it! bwah ha ha ha ha!
I started making a black bean truffle recipe, so Robert dropped everything to help out as needed. (he loves it when I experiment with desserts.)
Well, we were kind of disgusted with the ingredients and the initial smell after blending the mixture, but when all is said and done, we had to EAT OUR WORDS... BIG TIME!
And we also had to eat the truffles, but that wasn't difficult!
I made some changes to this recipe, so I am posting it exactly how WE made it.
Dark Chocolate Black Bean Wonder Truffles
Ingredients

1 15-oz can black beans,
drained and rinsed well

4 tbs coconut
oil, melted (melted means it is runny, like regular cooking oils)

5 tbs cocoa
powder
· dash of salt
·
3 tbs honey
·
1/2 tsp vanilla
· 1 package of semi sweet chocolate chips
Instructions

Place the beans, coconut
oil, cocoa powder, honey, vanilla, and salt in a food processor/blendor, and blend until
smooth and creamy. Transfer to a bowl and place in the fridge for 30 minutes to
chill and harden.

Once the mixture
has cooled, line a pan with wax/parchment paper, use small spoon to scoop, and hands to form small individual balls. Place balls on wax paper and return to fridge for another chill session.

Once the truffles are
ready to coat, melt chocolate chips in a microwavable bowl, and dip the balls in one at a time. (We had better luck only melting a portion of the chip at a time. It works better than way.)
Return those babies back to fridge, and try one in about a half hour. You will taste the Wonder of these Truffled Goodies! It almost boggles the mind out creamy they are!!!!
